Smashed Chive and Butter Potatoes

Ingredients

  • 3 lb small red potatoes
  • 4 cloves garlic
  • ½ cup butter, softened
  • ½ (8-oz) block cream cheese, softened
  • 3 Tbsp minced fresh chives

Instructions

  1. Combine potatoes, garlic cloves, and water to cover in a large Dutch oven. Bring to a boil over medium-high heat; reduce heat, and simmer 20 minutes or until potatoes are tender. Drain and return to pot.
  2. Add butter, cream cheese, and chives. Mash with a potato masher to desired consistency. Season with salt and pepper, if desired.
