Sweet and Sour Meatballs
Brown Rice
Ingredients
- ½ cup packed brown sugar
- ½ cup rice vinegar
- ¼ cup ketchup
- 2 Tbsp low-sodium soy sauce
- 2 cups pineapple juice
- 1 Tbsp cornstarch
- 1 (32-oz) pkg frozen meatballs
- 1 (16-oz) pkg frozen tricolor bell pepper strips
- 1 (20-oz) can pineapple chunks, drained
Instructions
- Stir together brown sugar, vinegar, ketchup, soy sauce, pineapple juice, and cornstarch in a large, deep skillet.
- Add meatballs and pepper strips; bring to a boil over medium-high heat. Reduce heat, and simmer 10 minutes or until thickened and bubbly. Stir in pineapple, and cook 3 minutes. Serve over rice.

- 3 (3.5-oz) pouches boil-in-bag brown rice

- Cook rice according to package directions.
