Sweet and Sour Meatballs

Ingredients

  • ½ cup packed brown sugar
  • ½ cup rice vinegar
  • ¼ cup ketchup
  • 2 Tbsp low-sodium soy sauce
  • 2 cups pineapple juice
  • 1 Tbsp cornstarch
  • 1 (32-oz) pkg frozen meatballs
  • 1 (16-oz) pkg frozen tricolor bell pepper strips
  • 1 (20-oz) can pineapple chunks, drained

Instructions

  1. Stir together brown sugar, vinegar, ketchup, soy sauce, pineapple juice, and cornstarch in a large, deep skillet.
  2. Add meatballs and pepper strips; bring to a boil over medium-high heat. Reduce heat, and simmer 10 minutes or until thickened and bubbly. Stir in pineapple, and cook 3 minutes. Serve over rice.

  • 3 (3.5-oz) pouches boil-in-bag brown rice

  1. Cook rice according to package directions.
