Easy Lemon-Dill Salmon
Lemony Italian Vegetable RotiniIngredients
- ¾ lb wild-caught salmon fillet
- 1 Tbsp butter, melted
- 2 Tbsp chopped fresh dill, divided (or use ½ Tbsp dried)
- 1 clove garlic, minced
- ½ lemon, halved
Instructions
- Preheat broiler with oven rack 6 inches from heat. Place fish on a foil-lined baking sheet. Whisk butter, 1 Tbsp dill, and garlic in a small bowl; brush mixture on fish.
- Broil 5 to 7 minutes or until fish flakes with a fork. Sprinkle with 1 Tbsp dill. Squeeze juice from lemon over fillet.

- 4 oz whole wheat rotini pasta
- ½ (12-oz) pkg frozen Italian vegetable medley
- 1½ Tbsp lemon juice
- 1 Tbsp olive oil
- ⅛ tsp salt

- Cook pasta according to package directions, adding vegetables during last 5 minutes of cooking.
- Drain and transfer to a bowl; stir in lemon juice, oil, and salt.
