Greek Turkey Burgers with Goat Cheese Tzatziki
Smashed Cucumber Salad
Ingredients
- 1 lemon
- ¾ cup whole milk plain Greek yogurt
- 1 (4-oz) log goat cheese, softened
- ½ English cucumber, finely chopped
- 3 Tbsp chopped fresh dill
- ½ tsp pepper
- 2 cloves garlic, crushed
- 1½ lb 85% lean ground turkey
- ¼ cup finely chopped red onion
- 1½ tsp Greek seasoning
- 12 Bibb lettuce leaves
- ½ cup roasted red peppers
Instructions
- Preheat grill or a grill pan to medium-high heat. Grate zest and squeeze juice from lemon.
- Mix together lemon zest, lemon juice, yogurt, cheese, cucumber, dill, pepper, and garlic in a bowl. Chill.
- Mix together turkey, onion, and seasoning in a large bowl; shape into 6 patties. Lightly coat both sides with cooking spray.
- Grill patties, covered, 5 to 7 minutes per side or until no longer pink. Serve burgers in lettuce leaves topped with roasted peppers and tzatziki.
Side Dish Ingredients
- 3 English cucumbers, cut into ½-inch half moons
- 1 Tbsp sugar
- 1 tsp kosher salt, divided
- ¼ cup extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp dried oregano
- 2 cloves garlic, crushed
Side Dish Instructions
- Place cucumbers in a large zip-top plastic bag; smash to flatten.
- Toss cucumbers with sugar and ¾ tsp salt in a mesh strainer; set over a large bowl, and chill 30 minutes. Drain; discard liquid.
- Whisk together oil, vinegar, mustard, oregano, ¼ tsp salt, and garlic in a bowl. Add cucumbers; toss.
