Greek Turkey Burgers with Goat Cheese Tzatziki

Ingredients

  • 1 lemon
  • ¾ cup whole milk plain Greek yogurt
  • 1 (4-oz) log goat cheese, softened
  • ½ English cucumber, finely chopped
  • 3 Tbsp chopped fresh dill
  • ½ tsp pepper
  • 2 cloves garlic, crushed
  • 1½ lb 85% lean ground turkey
  • ¼ cup finely chopped red onion
  • 1½ tsp Greek seasoning
  • 12 Bibb lettuce leaves
  • ½ cup roasted red peppers

Instructions

  1. Preheat grill or a grill pan to medium-high heat. Grate zest and squeeze juice from lemon.
  2. Mix together lemon zest, lemon juice, yogurt, cheese, cucumber, dill, pepper, and garlic in a bowl. Chill.
  3. Mix together turkey, onion, and seasoning in a large bowl; shape into 6 patties. Lightly coat both sides with cooking spray.
  4. Grill patties, covered, 5 to 7 minutes per side or until no longer pink. Serve burgers in lettuce leaves topped with roasted peppers and tzatziki.

  • 3 English cucumbers, cut into ½-inch half moons
  • 1 Tbsp sugar
  • 1 tsp kosher salt, divided
  • ¼ cup extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 2 cloves garlic, crushed

Side Dish Instructions

  1. Place cucumbers in a large zip-top plastic bag; smash to flatten.
  2. Toss cucumbers with sugar and ¾ tsp salt in a mesh strainer; set over a large bowl, and chill 30 minutes. Drain; discard liquid.
  3. Whisk together oil, vinegar, mustard, oregano, ¼ tsp salt, and garlic in a bowl. Add cucumbers; toss.
