Ingredients
- 2 slices bacon, chopped
- ¾ lb ground beef (or use ground chicken or ground turkey)
- ¼ cup chopped onion
- ¾ cup shredded Cheddar cheese, divided
- 1 large pickle, chopped
- 1 Roma tomato, seeded and chopped
- 2 slices American cheese
- ¼ head iceberg lettuce, shredded
Instructions
- Preheat oven to 350°F. Cook bacon in a skillet over medium-high heat 6 minutes or until crisp.
- Meanwhile, cook beef and onion in another skillet over medium-high heat; drain. Stir in ½ cup Cheddar cheese, bacon, pickle, and tomato.
- Spoon into a 9-inch casserole dish. Sprinkle with ¼ cup Cheddar; top with American cheese.
- Bake 15 minutes or until cheese is melted and browned. Top with shredded lettuce.
Side Dish Ingredients
- 2 bell peppers, cut into thin strips
- ½ (12-oz) pkg baby carrots
- ½ cup refrigerated yogurt Ranch dressing
Side Dish Instructions
- Serve vegetables with dressing.
