Ingredients

  • 2 slices bacon, chopped
  • ¾ lb ground beef (or use ground chicken or ground turkey)
  • ¼ cup chopped onion
  • ¾ cup shredded Cheddar cheese, divided
  • 1 large pickle, chopped
  • 1 Roma tomato, seeded and chopped
  • 2 slices American cheese
  • ¼ head iceberg lettuce, shredded

Instructions

  1. Preheat oven to 350°F. Cook bacon in a skillet over medium-high heat 6 minutes or until crisp.
  2. Meanwhile, cook beef and onion in another skillet over medium-high heat; drain. Stir in ½ cup Cheddar cheese, bacon, pickle, and tomato.
  3. Spoon into a 9-inch casserole dish. Sprinkle with ¼ cup Cheddar; top with American cheese.
  4. Bake 15 minutes or until cheese is melted and browned. Top with shredded lettuce.

  • 2 bell peppers, cut into thin strips
  • ½ (12-oz) pkg baby carrots
  • ½ cup refrigerated yogurt Ranch dressing

Side Dish Instructions

  1. Serve vegetables with dressing.
