Crunchy Sesame Salmon Salad
Ingredients
- 6 (6-oz) salmon fillets
- 1 tsp garlic salt
- 1 tsp pepper
- 2 Tbsp olive oil
- 1 (3-oz) pkg chicken-flavored ramen noodles
- 3 Tbsp tahini (sesame seed paste)
- 2 Tbsp rice vinegar
- 2 tsp sugar
- 2 tsp soy sauce
- 1 Tbsp minced garlic
- 1 (16-oz) pkg tricolor coleslaw
- 2 red bell peppers, sliced
Instructions
- Sprinkle salmon with garlic salt and pepper. Cook salmon, in batches, in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Transfer to a plate. Break salmon into large chunks using a fork.
- Whisk together noodles seasoning packet, tahini, vinegar, sugar, soy sauce, and garlic in bowl; lightly crush noodles, and set aside.
- Add slaw and bell peppers to bowl; toss. Arrange slaw mixture on plates; top with salmon and crushed noodles.
