Crunchy Sesame Salmon Salad

Ingredients

  • 6 (6-oz) salmon fillets
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 2 Tbsp olive oil
  • 1 (3-oz) pkg chicken-flavored ramen noodles
  • 3 Tbsp tahini (sesame seed paste)
  • 2 Tbsp rice vinegar
  • 2 tsp sugar
  • 2 tsp soy sauce
  • 1 Tbsp minced garlic
  • 1 (16-oz) pkg tricolor coleslaw
  • 2 red bell peppers, sliced

Instructions

  1. Sprinkle salmon with garlic salt and pepper. Cook salmon, in batches, in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Transfer to a plate. Break salmon into large chunks using a fork.
  2. Whisk together noodles seasoning packet, tahini, vinegar, sugar, soy sauce, and garlic in bowl; lightly crush noodles, and set aside.
  3. Add slaw and bell peppers to bowl; toss. Arrange slaw mixture on plates; top with salmon and crushed noodles.
