Bourbon 'n Coke Pork Tenderloin Sandwiches
Sweet Vinegar Slaw and Watermelon

Ingredients
- 1 cup cola soft drink
- ¼ cup bourbon
- ¼ cup ketchup
- ¼ cup packed brown sugar
- 1½ lb pork tenderloins, thinly sliced
- 2 Tbsp butter (or use olive oil)
- 6 ciabatta rolls (or use French steak rolls), split and toasted
- Mayonnaise (optional)
Instructions
- Bring soft drink, bourbon, ketchup, and brown sugar to a simmer in a small saucepan. Simmer over medium heat 10 to 15 minutes while preparing pork, stirring occasionally.
- Meanwhile, cook pork slices, in 2 batches, in 1 Tbsp melted butter per batch in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until almost done (pork will brown after you flip pieces over). Season each batch with salt and pepper, if desired. Return all pork to skillet.
- Add sauce to skillet with pork. Simmer 3 to 4 minutes longer, spooning sauce over pork. Serve saucy pork and Sweet Vinegar Slaw recipe on toasted rolls with a thin layer of mayonnaise, if desired.
Side Dish Ingredients
- 3 Tbsp apple cider vinegar
- 2 Tbsp honey
- ½ Tbsp grainy mustard
- 3 Tbsp olive oil
- 1 (16-oz) pkg tricolor coleslaw
- 1 (2-lb) container watermelon chunks
Side Dish Instructions
- Whisk first 4 ingredients in a large bowl. Add coleslaw, a few cups at a time, stirring until well coated. Season with salt and pepper, if desired. Chill if time allows.
- Serve watermelon on each plate.
