Ingredients
- 2 lb boneless, skinless chicken breasts, cut into chunks (or use chicken thighs)
- 1 (10-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery)
- 2 Tbsp olive oil
- 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano
- 1 Tbsp Creole seasoning
Instructions
- Season chicken lightly with salt and pepper, if desired. Sauté chicken and seasoning blend in hot oil in a large, deep skillet over medium-high heat 6 minutes.
- Add tomatoes and Creole seasoning; simmer 6 to 8 minutes or until chicken is done and sauce is thickened. Serve over Cheddar Grits recipe.

- 1½ cups quick-cooking grits
- 2 Tbsp butter
- 1 cup shredded Cheddar cheese
- ¾ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook grits according to package directions. Stir in butter, cheese, salt, and pepper.
