Oatmeal Cookie Sandwiches

Ingredients

  • ½ cup butter, softened
  • 1 cup packed brown sugar
  • 1 large egg, beaten
  • 1 Tbsp vanilla extract
  • 1¾ cups quick-cooking oats
  • ¾ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp ground cinnamon (optional)
  • ¾ cup raisins
  • Vanilla ice cream

Instructions

  1. Preheat oven to 350°F. Beat butter at medium speed with an electric mixer 1 to 2 minutes or until creamy. Add brown sugar; beat until light and fluffy. Add egg and vanilla; beat until well blended.
  2. Combine oats, flour, baking powder, soda and, if desired, cinnamon; gradually add to butter mixture, beating on low speed until blended. Stir in raisins.
  3. Drop dough by tablespoonfuls onto greased baking sheets. Bake 8 to 10 minutes; cool 5 minutes. Transfer to wire racks to cool completely.
  4. Smear a small amount of ice cream between 2 cookies. Serve immediately, or wrap and freeze individual sandwich cookies.
  5. Makes 12 sandwich cookies.
