Ingredients
- ½ Ib boneless, skinless chicken thighs, cubed (or use boneless, skinless chicken breasts)
- ⅓ cup chopped onion
- 1 clove garlic, minced
- 1 tsp Italian seasoning
- ⅛ tsp salt
- 2 tsp olive oil
- 1 (4.4-oz) cup microwavable brown rice
- ⅓ cup heavy cream
- ⅓ cup freshly grated Parmesan cheese
Instructions
- Cook chicken, onion, garlic, seasoning, and salt in hot oil in a skillet over medium-high heat 8 minutes or until chicken is browned and done.
- Meanwhile, cook rice according to package directions. Add rice, cream, and cheese to skillet; cook 2 to 3 minutes or until thick and creamy.

- 3 cups chopped kale
- 2 tsp white wine vinegar
- ⅛ tsp salt
