Honey-Garlic Chicken Skewers

Ingredients

  • 1½ Tbsp low-sodium soy sauce
  • 2 tsp honey
  • 2 tsp chili garlic sauce
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • ½ lb boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1 Tbsp olive oil
  • ⅛ tsp pepper
  • 1 green onion, thinly sliced

Instructions

  1. Preheat grill or grill pan to medium-high heat. Combine soy sauce, honey, garlic sauce, mustard, and garlic in a small saucepan. Cook over medium heat 4 to 6 minutes or until thickened. Divide mixture between two bowls.
  2. Thread chicken onto metal skewers. Brush with oil; sprinkle with pepper.
  3. Grill chicken, covered, 5 minutes per side or until done, brushing with half of soy sauce mixture. Sprinkle with onion, and serve with remaining soy sauce mixture.

  • 1 (3.5-oz) pouch boil-in-bag brown rice
  • ½ (20-oz) pkg frozen sugar snap pea stir-fry
  • 1 Tbsp olive oil
  • 1 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook vegetables according to package directions. Toss with oil and soy sauce.
