Quick Prep Slow Cooker
Root Beer Pot Roast
Creamy Grits and Petite Peas
Ingredients
- 1 onion, thinly sliced
- 2 lb boneless eye of the round roast
- 2 Tbsp olive oil
- ½ tsp pepper
- 1 (12-oz) can root beer soft drink (or use Coke or Dr. Pepper)
- 1 (12-oz) bottle chili sauce
Instructions
- Place onion in a greased 5- to 7-quart slow cooker.
- Rub roast with oil; sprinkle with pepper. Place over onion in slow cooker.
- Stir together root beer and chili sauce; pour over roast.
- Cover and cook on LOW 8 hours or until beef is tender. Slice roast; serve roast with sauce.
Side Dish Ingredients
- 4 cups water
- 2 cups milk
- 1½ cups uncooked quick-cooking grits
- 1 (16-oz) pkg frozen petite peas
Side Dish Instructions
- Bring water and milk to a boil in a saucepan; slowly whisk in grits. Reduce heat, and simmer, stirring frequently, until thickened.
- Cook peas according to package instructions.
