Corn and Basil Pasta
Easy Cheese Toast
Ingredients
- 1 (16-oz) pkg campanelle pasta (or fusilli pasta)
- 4 ears corn, shucked and cleaned
- 6 Tbsp butter
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup grated Parmesan cheese
- ⅓ cup fresh basil leaves
Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water. Return pasta to pasta pot.
- Meanwhile, remove kernels from corn.
- Melt butter in a large skillet over medium-high heat. Cook 3 to 4 minutes or until butter is browned and smells nutty. Reduce heat to medium. Add corn, salt, and pepper. Cook 2 minutes or until corn is thoroughly heated, stirring occasionally.
- Add corn mixture, cheese, and reserved pasta water to pasta in pot; toss. Sprinkle servings with basil.
Side Dish Ingredients
- 1 (16-oz) loaf French bread
- 4 Tbsp butter, softened
- 1 (8-oz) pkg shredded Cheddar cheese
Side Dish Instructions
- Preheat oven to 425°F. Cut bread in half lengthwise; spread butter on cut sides of bread. Sprinkle with cheese.
- Place on a baking sheet, and bake 10 minutes or until cheese melts and bread is toasted; slice to serve.
