Corn and Basil Pasta

Ingredients

  • 1 (16-oz) pkg campanelle pasta (or fusilli pasta)
  • 4 ears corn, shucked and cleaned
  • 6 Tbsp butter
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup grated Parmesan cheese
  • ⅓ cup fresh basil leaves 

Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water. Return pasta to pasta pot.
  2. Meanwhile, remove kernels from corn.
  3. Melt butter in a large skillet over medium-high heat. Cook 3 to 4 minutes or until butter is browned and smells nutty. Reduce heat to medium. Add corn, salt, and pepper. Cook 2 minutes or until corn is thoroughly heated, stirring occasionally.
  4. Add corn mixture, cheese, and reserved pasta water to pasta in pot; toss. Sprinkle servings with basil.

Side Dish Ingredients

  • 1 (16-oz) loaf French bread
  • 4 Tbsp butter, softened
  • 1 (8-oz) pkg shredded Cheddar cheese

Side Dish Instructions

  1. Preheat oven to 425°F. Cut bread in half lengthwise; spread butter on cut sides of bread. Sprinkle with cheese.
  2. Place on a baking sheet, and bake 10 minutes or until cheese melts and bread is toasted; slice to serve.
