Herb Pork Chops and Vegetables

Ingredients

  • 2 (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
  • 2 lb boneless pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¾ cup heavy cream
  • ¾ cup low-sodium chicken broth
  • 1½ tsp Italian seasoning
  • 1 tsp garlic powder

Instructions

  1. Cook vegetables according to package directions.
  2. Sprinkle pork with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned.
  3. Reduce heat to medium. Add cream, broth, seasoning, and garlic powder; cook 3 minutes or until sauce is thickened and pork is done. Stir in vegetables.
