Brown Sugar-Baked Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ½ cup packed brown sugar
  • ¼ cup butter, melted
  • 3 Tbsp ketchup
  • 2 Tbsp Dijon mustard
  • 1 Tbsp Worcestershire sauce

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season with salt and pepper, if desired.
  2. Cook chicken in hot oil in a large ovenproof skillet over medium-high heat 3 minutes per side or until browned.
  3. Stir together brown sugar and remaining ingredients; pour over chicken. Transfer skillet to oven, and bake 15 minutes or until chicken is done.

Side Dish Ingredients

  • 2 lb small red potatoes, quartered
  • ¼ cup olive oil
  • ⅓ cup grated Parmesan cheese
  • 1½ tsp Italian seasoning
  • 2 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Preheat oven to 400°F. Toss potatoes with oil, cheese, and seasoning on a lightly greased rimmed baking sheet. Spread in a single layer, and season with salt and pepper, if desired.
  2. Bake 25 to 30 minutes or until browned and tender.
  3. Cook green beans according to package directions. Season with salt and pepper, if desired.
