Ingredients

  • 1 (16-oz) pkg sweet mini peppers
  • 3 ears corn
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 2 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard 
  • 2 tsp honey
  • ½ tsp kosher salt
  • 1 (16-oz) pkg tricolor coleslaw

Instructions

  1. Thinly slice peppers into rings; discard stems. Cut kernels from cobs; discard cobs.
  2. Combine oil, vinegar, mayonnaise, mustard, honey, and salt in a large bowl. Add peppers, corn, and coleslaw; toss.
