Ingredients
- 1 (16-oz) pkg sweet mini peppers
- 3 ears corn
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 2 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- 2 tsp honey
- ½ tsp kosher salt
- 1 (16-oz) pkg tricolor coleslaw
Instructions
- Thinly slice peppers into rings; discard stems. Cut kernels from cobs; discard cobs.
- Combine oil, vinegar, mayonnaise, mustard, honey, and salt in a large bowl. Add peppers, corn, and coleslaw; toss.
