Pork Roast with Balsamic-Orange Sauce

Ingredients

  • 2½ lb boneless pork shoulder roast, well trimmed
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • ½ cup orange juice
  • ½ cup gluten-free chicken broth
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp cornstarch
  • 2 Tbsp water

Instructions

  1. Sprinkle pork with Italian seasoning, salt, and pepper. Place in a 5- to 7-quart slow cooker; add onions and next 4 ingredients.
  2. Cover and cook on LOW 8 to 10 hours or until pork is tender; remove pork, reserving mixture in cooker.
  3. Combine cornstarch and water; add to cooker. Cover and cook on HIGH 15 minutes or until slightly thickened.
  4. Slice pork, and serve with sauce.

Side Dish Ingredients

  • 1 (24-oz) pkg gourmet red potatoes, cut into 1-inch pieces
  • ¾ cup milk
  • 2 Tbsp butter
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 1 (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Boil potatoes in water to cover in a saucepan 10 minutes or until tender; drain.
  2. Return to pan; add milk, butter, and ½ tsp each salt and pepper. Mash to desired consistency.
  3. Steam beans according to package directions; season ¼ tsp each salt and pepper.
