Pork Roast with Balsamic-Orange Sauce
Creamy Mashed Potatoes and Steamed Green BeansIngredients
- 2½ lb boneless pork shoulder roast, well trimmed
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- 2 onions, sliced
- 3 cloves garlic, minced
- ½ cup orange juice
- ½ cup gluten-free chicken broth
- 2 Tbsp balsamic vinegar
- 2 Tbsp cornstarch
- 2 Tbsp water
Instructions
- Sprinkle pork with Italian seasoning, salt, and pepper. Place in a 5- to 7-quart slow cooker; add onions and next 4 ingredients.
- Cover and cook on LOW 8 to 10 hours or until pork is tender; remove pork, reserving mixture in cooker.
- Combine cornstarch and water; add to cooker. Cover and cook on HIGH 15 minutes or until slightly thickened.
- Slice pork, and serve with sauce.
Side Dish Ingredients
- 1 (24-oz) pkg gourmet red potatoes, cut into 1-inch pieces
- ¾ cup milk
- 2 Tbsp butter
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 1 (16-oz) pkg frozen green beans
Side Dish Instructions
- Boil potatoes in water to cover in a saucepan 10 minutes or until tender; drain.
- Return to pan; add milk, butter, and ½ tsp each salt and pepper. Mash to desired consistency.
- Steam beans according to package directions; season ¼ tsp each salt and pepper.
