Turkey Cuban Quesadillas
Tomato Coleslaw
Ingredients
- ⅓ lb thinly sliced low-sodium deli ham
- ⅓ lb thinly sliced low-sodium deli turkey
- 1 (8-oz) pkg sliced Swiss cheese
- ¾ cup dill pickle chips
- 6 large whole-wheat low-carb tortillas
- ¼ cup reduced-fat olive-oil mayonnaise
- ¼ cup whole-grain Dijon mustard
- ½ Tbsp prepared horseradish
Instructions
- Arrange ham, turkey, cheese, and dill pickle chips on one side of each tortilla. Fold tortillas in half.
- Cook quesadillas, in batches, in a large nonstick skillet coated with cooking spray over medium heat 4 to 5 minutes per side or until golden brown.
- Meanwhile, stir together mayonnaise, mustard, and horseradish in a bowl.
- Cut quesadillas into wedges and serve with mayonnaise mixture for dipping.

- 3 Tbsp olive oil
- 2 Tbsp rice vinegar
- 1 Tbsp honey
- 1 Tbsp whole-grain Dijon mustard
- 1 (16-oz) pkg tri-color coleslaw mix
- 1 pint grape tomatoes, halved
Side Dish Instructions
- Whisk together oil, vinegar, honey, and mustard in a large bowl. Add coleslaw mix and tomatoes; toss.
