Turkey Cuban Quesadillas

Ingredients

  • ⅓ lb thinly sliced low-sodium deli ham
  • ⅓ lb thinly sliced low-sodium deli turkey
  • 1 (8-oz) pkg sliced Swiss cheese
  • ¾ cup dill pickle chips
  • 6 large whole-wheat low-carb tortillas
  • ¼ cup reduced-fat olive-oil mayonnaise
  • ¼ cup whole-grain Dijon mustard
  • ½ Tbsp prepared horseradish

Instructions

  1. Arrange ham, turkey, cheese, and dill pickle chips on one side of each tortilla. Fold tortillas in half.
  2. Cook quesadillas, in batches, in a large nonstick skillet coated with cooking spray over medium heat 4 to 5 minutes per side or until golden brown.
  3. Meanwhile, stir together mayonnaise, mustard, and horseradish in a bowl.
  4. Cut quesadillas into wedges and serve with mayonnaise mixture for dipping.

  • 3 Tbsp olive oil
  • 2 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1 Tbsp whole-grain Dijon mustard
  • 1 (16-oz) pkg tri-color coleslaw mix
  • 1 pint grape tomatoes, halved

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, and mustard in a large bowl. Add coleslaw mix and tomatoes; toss.
