Quick Greek Meatballs
Rice Pilaf and Sautéed CarrotsIngredients
- ¾ lb ground beef
- ¼ cup grated Parmesan cheese
- ¼ cup panko breadcrumbs
- ½ Tbsp Greek seasoning
- 1 egg yolk, lightly beaten
- ½ cup spinach and artichoke dip
Instructions
- Preheat oven to 400°F. Stir together beef, cheese, breadcrumbs, Greek seasoning, and egg yolk in a bowl.
- Shape mixture into 10 meatballs, and place on a lightly greased rack on a foil-lined rimmed baking sheet.
- Bake 20 minutes or until meatballs are no longer pink. Serve meatballs with dip.

- 1 (8.8-oz) pouch microwavable rice pilaf
- 1 Tbsp butter
- ½ (16-oz) pkg sliced carrots
Side Dish Instructions
- Microwave rice pilaf according to package directions.
- Heat butter in a large nonstick skillet over medium heat; add carrots. Cook 5 to 6 minutes or until tender.
