Quick Greek Meatballs

Rice Pilaf and Sautéed Carrots

Ingredients

  • ¾ lb ground beef
  • ¼ cup grated Parmesan cheese
  • ¼ cup panko breadcrumbs
  • ½ Tbsp Greek seasoning
  • 1 egg yolk, lightly beaten
  • ½ cup spinach and artichoke dip

Instructions

  1. Preheat oven to 400°F. Stir together beef, cheese, breadcrumbs, Greek seasoning, and egg yolk in a bowl.
  2. Shape mixture into 10 meatballs, and place on a lightly greased rack on a foil-lined rimmed baking sheet.
  3. Bake 20 minutes or until meatballs are no longer pink. Serve meatballs with dip.

Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable rice pilaf
  • 1 Tbsp butter
  • ½ (16-oz) pkg sliced carrots

Side Dish Instructions

  1. Microwave rice pilaf according to package directions.
  2. Heat butter in a large nonstick skillet over medium heat; add carrots. Cook 5 to 6 minutes or until tender.
