Italian Chicken Dinner

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ⅓ cup creamy Italian dressing
  • ½ (12-oz) pkg frozen broccoli
  • ½ (12-oz) pkg frozen crinkle-cut carrots
  • 1 (24-oz) carton refrigerated garlic mashed potatoes

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 2 minutes per side.
  2. Add dressing; cover, reduce heat, and simmer 2 minutes.
  3. Add frozen vegetables; cover, and cook 5 minutes or until chicken is done and vegetables are crisp-tender. Season with salt and pepper, if desired.
  4. Meanwhile, heat potatoes according to package directions. Serve chicken and vegetables with potatoes.
