Chickpea-Farro Salad with Yogurt Dressing

Ingredients

  • ½ cup quick-cooking farro (or use barley or brown rice)
  • 1 (8-oz) pkg thin green beans
  • ¼ cup whole-milk plain Greek yogurt 
  • 2 Tbsp olive oil
  • 1½ Tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1 (15-oz) can chickpeas, drained and rinsed
  • ½ (12-oz) jar marinated artichoke hearts, drained
  • 2 Tbsp chopped fresh basil

Instructions

  1. Cook farro according to package directions. Cool.
  2. Meanwhile, steam green beans according to package directions; cut into 1-inch pieces. Cool.
  3. Whisk together yogurt, oil, lemon juice, garlic, salt, and pepper in a large bowl. Add farro, green beans, chickpeas, and artichokes; toss. Sprinkle with basil.
