Chickpea-Farro Salad with Yogurt Dressing

Ingredients
- ½ cup quick-cooking farro (or use barley or brown rice)
- 1 (8-oz) pkg thin green beans
- ¼ cup whole-milk plain Greek yogurt
- 2 Tbsp olive oil
- 1½ Tbsp lemon juice
- 1 clove garlic, minced
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1 (15-oz) can chickpeas, drained and rinsed
- ½ (12-oz) jar marinated artichoke hearts, drained
- 2 Tbsp chopped fresh basil
Instructions
- Cook farro according to package directions. Cool.
- Meanwhile, steam green beans according to package directions; cut into 1-inch pieces. Cool.
- Whisk together yogurt, oil, lemon juice, garlic, salt, and pepper in a large bowl. Add farro, green beans, chickpeas, and artichokes; toss. Sprinkle with basil.
