Weeknight Shrimp Boil

Ingredients
- 1½ lb small red potatoes, quartered
- 2 Tbsp olive oil
- 1½ tsp Old Bay seasoning, divided
- ½ tsp pepper
- 1½ lb peeled and deveined, large raw shrimp
- 1 (12-oz) pkg Cajun-style andouille smoked sausage
- 1 (6-count) pkg frozen ears corn
- 6 Tbsp butter, softened
- ½ cup chopped fresh parsley (optional)
- ¾ cup cocktail sauce (optional)
Instructions
- Preheat oven to 450°F. Toss together potatoes, oil, ¾ tsp Old Bay seasoning, and pepper on a large rimmed baking sheet; spread in a single layer. Roast 10 minutes.
- Toss together shrimp, sausage, and ½ tsp Old Bay seasoning on another rimmed baking sheet. Add pan with shrimp mixture to oven. Roast shrimp and potatoes 10 to 15 minutes or until shrimp turn pink and potatoes are lightly browned and tender.
- Meanwhile, microwave corn according to package directions. Spread corn with butter, and sprinkle with ¼ tsp Old Bay seasoning. Sprinkle with parsley, and serve with cocktail sauce, if desired.
