Ingredients

  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1½ lb ground beef
  • ¾ cup panko breadcrumbs
  • ½ tsp salt
  • ½ tsp pepper
  • 4 oz provolone cheese, cut into small cubes
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat oven to 375°F. Cook onion and bell pepper in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add garlic; cook 1 minute or until fragrant. Transfer mixture to a large bowl; cool slightly.
  2. Add beef, breadcrumbs, salt, pepper, cheese, and eggs to bowl; stir well. Shape mixture into 6 small loaves.
  3. Place loaves on a wire rack set on a foil-lined rimmed baking sheet. Bake 30 to 35 minutes or until no longer pink in centers.

Side Dish Ingredients

  • 2 (6.4-oz) pkg cream four-cheese rice mix
  • 1 (12-oz) pkg frozen green beans
  • 1½ tsp Italian seasoning
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook beans according to package directions. Toss with seasoning and pepper.
