Sausage Cabbage Rolls
Warm Couscous and Tomato SaladIngredients
- 4 large cabbage leaves
- ½ lb ground mild Italian sausage
- ½ cup chopped green bell pepper
- ¼ cup chopped onion
- ⅛ tsp pepper
- ½ (14.5-oz) can fire-roasted crushed tomatoes
- ⅓ cup low-sodium chicken broth
- 1 tsp Worcestershire sauce
- ½ tsp dried basil
- 1 clove garlic, minced
Instructions
- Cook cabbage in boiling water to cover in a saucepan over medium-high heat 5 minutes or until tender. Drain and rinse under cold water.
- Combine sausage, onion, bell pepper, and pepper. Divide sausage mixture among cabbage leaves; roll up leaves. Arrange in a 3- to 4-quart slow cooker.
- Stir together tomatoes, broth, Worcestershire sauce, basil, and garlic. Pour tomato mixture over cabbage rolls.
- Cover and cook on LOW 7 to 8 hours or until sausage is fully cooked and no longer pink.

- ½ cup plain couscous
- 1 Tbsp olive oil
- 2 tsp balsamic vinegar
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Roma tomato, chopped
- 3 Tbsp chopped fresh parsley
- 1 green onion, sliced
Side Dish Instructions
- Prepare couscous according to package directions.
- Whisk together oil, vinegar, salt, and pepper in a medium bowl. Add couscous, tomato, parsley, and green onion; toss.
