Sausage Cabbage Rolls

Ingredients

  • 4 large cabbage leaves
  • ½ lb ground mild Italian sausage
  • ½ cup chopped green bell pepper
  • ¼ cup chopped onion
  • ⅛ tsp pepper
  • ½ (14.5-oz) can fire-roasted crushed tomatoes
  • ⅓ cup low-sodium chicken broth
  • 1 tsp Worcestershire sauce
  • ½ tsp dried basil
  • 1 clove garlic, minced

Instructions

  1. Cook cabbage in boiling water to cover in a saucepan over medium-high heat 5 minutes or until tender. Drain and rinse under cold water.
  2. Combine sausage, onion, bell pepper, and pepper. Divide sausage mixture among cabbage leaves; roll up leaves. Arrange in a 3- to 4-quart slow cooker.
  3. Stir together tomatoes, broth, Worcestershire sauce, basil, and garlic. Pour tomato mixture over cabbage rolls.
  4. Cover and cook on LOW 7 to 8 hours or until sausage is fully cooked and no longer pink.

  • ½ cup plain couscous
  • 1 Tbsp olive oil
  • 2 tsp balsamic vinegar
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Roma tomato, chopped
  • 3 Tbsp chopped fresh parsley
  • 1 green onion, sliced

Side Dish Instructions

  1. Prepare couscous according to package directions.
  2. Whisk together oil, vinegar, salt, and pepper in a medium bowl. Add couscous, tomato, parsley, and green onion; toss.
