Beef and Zucchini Meat Loaf
Mashed Potatoes and Green Beans
Ingredients
- 2 lb lean ground beef
- 2 zucchini, shredded and squeezed dry (see Note)
- ½ cup finely shredded Parmesan cheese
- ¼ cup chopped fresh parsley
- 2 large eggs
- 4 cloves garlic, minced
- 3 Tbsp balsamic vinegar
- 1 Tbsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- ½ cup ketchup
Instructions
- Stir together all ingredients except ketchup in a large bowl.
- Press meat mixture into a greased 5- to 7-quart slow cooker, leaving a ½-inch space around edges.
- Cover and cook on LOW 8 hours or until done. Spread ketchup over loaf, cover, and cook 30 minutes.
- Carefully remove meat loaf from cooker. Drain fat, and slice.
Side Dish Ingredients
- 1 (24-oz) pkg refrigerated mashed potatoes
- 2 (8-oz) pkg green beans
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook mashed potatoes according to package directions.
- Cook green beans according to package directions. Sprinkle with salt and pepper.
