Beef and Zucchini Meat Loaf

Mashed Potatoes and Green Beans

Ingredients

  • 2 lb lean ground beef
  • 2 zucchini, shredded and squeezed dry (see Note)
  • ½ cup finely shredded Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 2 large eggs
  • 4 cloves garlic, minced
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup ketchup

Instructions

  1. Stir together all ingredients except ketchup in a large bowl.
  2. Press meat mixture into a greased 5- to 7-quart slow cooker, leaving a ½-inch space around edges.
  3. Cover and cook on LOW 8 hours or until done. Spread ketchup over loaf, cover, and cook 30 minutes.
  4. Carefully remove meat loaf from cooker. Drain fat, and slice.

Side Dish Ingredients

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 2 (8-oz) pkg green beans
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook mashed potatoes according to package directions.
  2. Cook green beans according to package directions. Sprinkle with salt and pepper.
