Lime Grilled Chicken Tacos
Cilantro-Lime Rice and Orange Slices
Ingredients
- ½ cup chopped fresh cilantro
- ¼ cup mayonnaise
- ¼ cup olive oil
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 lime
- 2 lb boneless, skinless chicken breasts
- 2 (11-oz) pkg street taco flour tortillas
- 1 (8-oz) pkg shredded colby-Jack cheese
- 1 (16-oz) container refrigerated salsa
Instructions
- Stir together cilantro, mayonnaise, oil, cumin, and garlic powder in a bowl. Grate zest and squeeze juice from lime into mixture.
- Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season with salt and pepper, if desired.
- Pour cilantro mixture over chicken in a zip-top plastic bag. Seal bag, and marinate in refrigerator 4 to 6 hours.
- Preheat grill or grill pan to medium-high heat. Remove chicken from marinade; discard marinade.
- Grill chicken, covered, 6 minutes per side or until done. Let stand 5 minutes before thinly slicing.
- Heat tortillas according to package directions. Serve chicken, cheese, and salsa in tortillas.

- 3 oranges, sectioned
Side Dish Instructions
- Prepare rice according to package directions.
- Serve orange sections on each plate.
