Lime Grilled Chicken Tacos

Ingredients

  • ½ cup chopped fresh cilantro
  • ¼ cup mayonnaise
  • ¼ cup olive oil
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 lime
  • 2 lb boneless, skinless chicken breasts
  • 2 (11-oz) pkg street taco flour tortillas
  • 1 (8-oz) pkg shredded colby-Jack cheese
  • 1 (16-oz) container refrigerated salsa

Instructions

  1. Stir together cilantro, mayonnaise, oil, cumin, and garlic powder in a bowl. Grate zest and squeeze juice from lime into mixture.
  2. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season with salt and pepper, if desired.
  3. Pour cilantro mixture over chicken in a zip-top plastic bag. Seal bag, and marinate in refrigerator 4 to 6 hours.
  4. Preheat grill or grill pan to medium-high heat. Remove chicken from marinade; discard marinade.
  5. Grill chicken, covered, 6 minutes per side or until done. Let stand 5 minutes before thinly slicing.
  6. Heat tortillas according to package directions. Serve chicken, cheese, and salsa in tortillas.

  • 2 (5.6-oz) pkg cilantro-lime rice mix (such as Rice-a-Roni)
  • 3 oranges, sectioned

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Serve orange sections on each plate.
