Sausage and Potato Frittata
English Muffins with Strawberry Butter and Sliced MelonIngredients
- 1 (16-oz) pkg ground pork sausage
- 3 cups frozen diced hash browns, thawed
- 12 large eggs
- 1 tsp salt
- 1 tsp garlic powder
- ½ tsp pepper
- 1 cup shredded Italian-blend cheese
Instructions
- Preheat oven to 350°F. Cook sausage in a large ovenproof skillet over medium heat, stirring occasionally, until browned and crumbly. Stir in hash browns.
- Whisk together eggs, salt, garlic powder, and pepper in a bowl. Add to skillet, and cook, stirring, 2 minutes. Sprinkle with cheese. Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.
Side Dish Ingredients
- 1 (6-count) pkg English muffins, split
- ½ cup butter, softened
- ¼ cup strawberry preserves
- 1 honeydew melon, sliced
Side Dish Instructions
- Preheat broiler. Place muffins, cut sides up on a baking sheet; broil until toasted.
- Meanwhile, stir together butter and preserves. Serve with toasted muffins.
- Serve sliced melon on each plate.
