Ingredients

  • 6 slices center cut bacon, chopped
  • 1½ lb peeled and deveined, large raw shrimp
  • ⅓ cup chopped fresh parsley
  • 6 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook bacon in a large skillet over medium-high heat 5 to 6 minutes or until crisp. Remove bacon from skillet, reserving drippings in skillet.
  2. Cook shrimp in hot drippings 2 to 3 minutes per side or until shrimp turn pink.
  3. Add bacon, parsley, garlic, salt, and pepper; cook 1 minute. Serve over Italian Parmesan Polenta recipe.

  • 12 cups water
  • ½ tsp salt
  • 3 cups yellow cornmeal
  • 2 Tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning

Side Dish Instructions

  1. Bring water to a boil in a large saucepan over medium-high heat; add salt.
  2. Gradually stir in cornmeal; reduce heat to low and cook, stirring often, 12 to 15 minutes or until thickened.
  3. Remove from heat; stir in oil, cheese, and seasoning.
