Mediterranean Farro Salad

Ingredients

  • ½ cup pearled farro
  • ½ lb asparagus, trimmed and cut into 2-inch pieces
  • 1 Tbsp olive oil
  • 1 cup canned, drained and rinsed chickpeas
  • 1 cup grape tomatoes, halved
  • ⅓ cup crumbled feta cheese
  • ¼ cup refrigerated lemon vinaigrette
  • ¼ cup chopped fresh parsley

Instructions

  1. Cook farro according to package directions.
  2. Meanwhile, cook asparagus in hot oil in a skillet over medium-high heat 5 minutes or until lightly browned.
  3. Toss together farro, asparagus, and remaining ingredients in a bowl.
