Mediterranean Farro Salad
Ingredients
- ½ cup pearled farro
- ½ lb asparagus, trimmed and cut into 2-inch pieces
- 1 Tbsp olive oil
- 1 cup canned, drained and rinsed chickpeas
- 1 cup grape tomatoes, halved
- ⅓ cup crumbled feta cheese
- ¼ cup refrigerated lemon vinaigrette
- ¼ cup chopped fresh parsley
Instructions
- Cook farro according to package directions.
- Meanwhile, cook asparagus in hot oil in a skillet over medium-high heat 5 minutes or until lightly browned.
- Toss together farro, asparagus, and remaining ingredients in a bowl.
