Pizza Chicken
Ingredients
- ¾ lb boneless, skinless chicken breasts, cut in half lengthwise
- ¼ tsp dried oregano
- ¼ tsp pepper
- Dash of salt
- 1 Tbsp olive oil, divided
- 1 (9-oz) pkg refrigerated linguine
- ½ (24-oz) jar marinara sauce
- ½ cup shredded part-skim mozzarella cheese
- 2 Tbsp freshly grated Parmesan cheese
- 12 slices turkey pepperoni
- 2 Tbsp torn fresh basil
Instructions
- Sprinkle chicken with oregano, pepper, and salt. Cook chicken in ½ Tbsp hot oil in a cast-iron or ovenproof skillet over medium-high heat 5 minutes per side or until browned and done.
- Meanwhile, cook pasta according to package directions. Toss with ½ Tbsp oil.
- Preheat broiler. Pour marinara sauce around chicken; cook 1 minute. Sprinkle with mozzarella, Parmesan, and pepperoni. Transfer to oven; broil on second oven shelf 2 minutes or until browned. Sprinkle with basil.
- Serve chicken over pasta.
