Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut in half lengthwise
  • ¼ tsp dried oregano
  • ¼ tsp pepper
  • Dash of salt
  • 1 Tbsp olive oil, divided
  • 1 (9-oz) pkg refrigerated linguine
  • ½ (24-oz) jar marinara sauce
  • ½ cup shredded part-skim mozzarella cheese
  • 2 Tbsp freshly grated Parmesan cheese
  • 12 slices turkey pepperoni
  • 2 Tbsp torn fresh basil

Instructions

  1. Sprinkle chicken with oregano, pepper, and salt. Cook chicken in ½ Tbsp hot oil in a cast-iron or ovenproof skillet over medium-high heat 5 minutes per side or until browned and done.
  2. Meanwhile, cook pasta according to package directions. Toss with ½ Tbsp oil.
  3. Preheat broiler. Pour marinara sauce around chicken; cook 1 minute. Sprinkle with mozzarella, Parmesan, and pepperoni. Transfer to oven; broil on second oven shelf 2 minutes or until browned. Sprinkle with basil.
  4. Serve chicken over pasta.
