Ingredients

  • ½ (16-oz) pkg penne pasta
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 shallot, minced
  • 1 clove garlic, minced
  • ¼ tsp crushed red pepper
  • ¼ cup vodka
  • ½ (4.5-oz) tube tomato paste
  • ½ cup heavy cream
  • ½ (0.5-oz) pkg fresh basil, thinly sliced
  • ½ cup freshly shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ¾ cup pasta water.
  2. Meanwhile, heat oil and butter in a large skillet over medium-high heat. Add shallot, garlic, and crushed red pepper; cook 2 to 3 minutes or until shallot is just tender. Add vodka; simmer 2 to 3 minutes until reduced by half.
  3. Add tomato paste; cook 3 to 4 minutes. Add ½ cup pasta water; cook 2 to 3 minutes or until a sauce forms. Add ¼ cup heavy cream; simmer 1 minute. Add remaining cream, and simmer 1 to 2 minutes. Season with salt and pepper, if desired.
  4. Toss sauce with hot cooked pasta. Add remaining ¼ cup pasta water only if needed. Sprinkle with basil and cheese before serving.
