Crunchy Sesame Salmon Salad

Ingredients

  • 3 (6-oz) salmon fillets
  • ½ tsp garlic salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • ½ (3-oz) pkg chicken-flavored ramen noodles
  • 1½ Tbsp tahini (sesame seed paste)
  • 1 Tbsp rice vinegar
  • ½ Tbsp minced garlic
  • 1 tsp sugar
  • 1 tsp low-sodium soy sauce
  • ½ (16-oz) pkg tricolor coleslaw
  • 1 red bell pepper, sliced

Instructions

  1. Sprinkle fish with garlic salt and pepper. Cook fish in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Transfer to a plate. Break fish into large chunks using a fork.
  2. Whisk together noodles seasoning packet, tahini, vinegar, garlic, sugar, and soy sauce in a bowl; lightly crush noodles, and set aside.
  3. Add slaw and bell pepper to bowl; toss. Arrange slaw mixture on plates; top with fish and crushed noodles.
