Crunchy Sesame Salmon Salad
Ingredients
- 3 (6-oz) salmon fillets
- ½ tsp garlic salt
- ½ tsp pepper
- 1 Tbsp olive oil
- ½ (3-oz) pkg chicken-flavored ramen noodles
- 1½ Tbsp tahini (sesame seed paste)
- 1 Tbsp rice vinegar
- ½ Tbsp minced garlic
- 1 tsp sugar
- 1 tsp low-sodium soy sauce
- ½ (16-oz) pkg tricolor coleslaw
- 1 red bell pepper, sliced
Instructions
- Sprinkle fish with garlic salt and pepper. Cook fish in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Transfer to a plate. Break fish into large chunks using a fork.
- Whisk together noodles seasoning packet, tahini, vinegar, garlic, sugar, and soy sauce in a bowl; lightly crush noodles, and set aside.
- Add slaw and bell pepper to bowl; toss. Arrange slaw mixture on plates; top with fish and crushed noodles.
