Ingredients
- 1½ Tbsp olive oil, divided
- 1 tsp Creole seasoning
- ½ tsp hot sauce
- 6 (4-oz) bone-in, skin-on chicken thighs
- ¼ tsp salt
Instructions
- Preheat grill or grill pan to medium heat. Combine 1 Tbsp oil, Creole seasoning, and hot sauce in a large bowl. Add chicken, and toss. Sprinkle with salt and, if desired, pepper.
- Place chicken on a grill rack rubbed with ½ Tbsp oil. Grill, covered, 6 to 7 minutes per side or until chicken is done.

- 1½ Tbsp olive oil
- 1 Tbsp balsamic vinegar
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 clove garlic, minced
- ½ (5-oz) pkg baby arugula (or use mixed baby greens)
- 1 cup halved grape tomatoes
- 2½ Tbsp crumbled blue cheese
Side Dish Instructions
- Whisk together oil, vinegar, salt, pepper, and garlic in a medium bowl. Add arugula, tomatoes, and cheese; toss.
