Ingredients

  • 1½ Tbsp olive oil, divided
  • 1 tsp Creole seasoning
  • ½ tsp hot sauce
  • 6 (4-oz) bone-in, skin-on chicken thighs
  • ¼ tsp salt

Instructions

  1. Preheat grill or grill pan to medium heat. Combine 1 Tbsp oil, Creole seasoning, and hot sauce in a large bowl. Add chicken, and toss. Sprinkle with salt and, if desired, pepper.
  2. Place chicken on a grill rack rubbed with ½ Tbsp oil. Grill, covered, 6 to 7 minutes per side or until chicken is done.

  • 1½ Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 clove garlic, minced
  • ½ (5-oz) pkg baby arugula (or use mixed baby greens)
  • 1 cup halved grape tomatoes
  • 2½ Tbsp crumbled blue cheese

Side Dish Instructions

  1. Whisk together oil, vinegar, salt, pepper, and garlic in a medium bowl. Add arugula, tomatoes, and cheese; toss.
