Pork Chops with Mushroom Gravy

Ingredients

  • 3 (1-inch-thick) bone-in pork chops
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ onion, chopped
  • 1 clove garlic, minced
  • ½ cup low-sodium chicken broth
  • 1 Tbsp olive oil
  • ½ Tbsp low-sodium soy sauce
  • ½ Tbsp Dijon mustard
  • 1 (8-oz) pkg sliced mushrooms
  • 1 Tbsp cornstarch
  • 1½ Tbsp cold water

Instructions

  1. Sprinkle pork with salt and pepper, and place in a 3- to 4-quart slow cooker.
  2. Stir together onion, garlic, broth, oil, soy sauce, and mustard; pour over pork. Top with mushrooms.
  3. Cover and cook on LOW 7 hours or until pork is tender. Remove pork, cover with foil. Whisk together cornstarch and water; add to cooker. Increase heat to HIGH, cover and cook 15 minutes or until gravy is thickened. Serve mushroom gravy over pork.

  • 1 (12-oz) pkg broccoli florets
  • 1 Tbsp olive oil
  • ½ tsp orange zest
  • 1 Tbsp fresh orange juice
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook broccoli in hot oil in a skillet over medium-high heat 6 minutes or until crisp-tender. Stir in orange zest, orange juice, salt, and pepper.
