Ingredients

  • 1 Tbsp butter
  • 1 onion, thinly sliced
  • 2 (1-inch-thick) boneless pork chops
  • 1 Tbsp olive oil
  • ½ (10.5-oz) can French onion soup (or use cream of mushroom soup)
  • ¼ tsp dried thyme

Instructions

  1. Melt butter in a cast-iron skillet over medium heat; add onion, and cook, stirring often, 5 to 10 minutes or until very tender. Remove from skillet.
  2. Season pork with salt and pepper, if desired. Cook in hot oil in skillet over medium-high heat 3 minutes per side or until browned. Add soup, thyme, and onions to skillet. Cook until pork is done.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen green peas
  • 1 Tbsp butter
  • 1 (24-oz) carton refrigerated mashed potatoes

Side Dish Instructions

  1. Steam peas according to package directions; toss with butter. Season with salt and pepper, if desired.
  2. Heat potatoes according to package directions in microwave.
