Ingredients
- 1 cup quick-cooking farro

- 2 Tbsp minced red onion
- ¼ cup olive oil vinaigrette
- 1½ tsp lemon zest

- ⅛ tsp crushed red pepper
- 1 (5-oz) pkg baby arugula
- ½ cup jarred roasted red peppers, sliced
Instructions
- Cook farro according to package directions. Drain and rinse with cold water; place farro, beans, and onion in a large bowl.
- Whisk together vinaigrette, lemon zest, salt, and red pepper. Drizzle vinaigrette over farro mixture. Stir in arugula and roasted pepper; toss.
