Fig and Brown Sugar Vodka Shrub

Ingredients

  • 1 cup ripe figs, halved
  • ¼ cup brown sugar
  • ¼ cup white wine vinegar
  • ⅓ cup water
  • 3 Tbsp vodka (80 proof)
  • ½ cup sparkling water

Instructions

  1. Place figs in a 1-quart jar; set aside. Bring sugar, vinegar, and water to a boil in a small saucepan over medium heat, stirring constantly until sugar dissolves.
  2. Pour sugar mixture over fruit, and gently stir. Muddle with a spoon. Cool to room temperature, seal jar, and store in refrigerator 8 hours or up to 2 days.
  3. Strain fig mixture twice through a fine-mesh sieve. Shrub makes ¾ cup.
  4. For each drink, pour 2 to 3 Tbsp shrub and vodka into a glass filled half full with ice; top with sparkling water. Store any remaining shrub in refrigerator up to 1 week.
