Fig and Brown Sugar Vodka Shrub

Ingredients
- 1 cup ripe figs, halved
- ¼ cup brown sugar
- ¼ cup white wine vinegar
- ⅓ cup water
- 3 Tbsp vodka (80 proof)
- ½ cup sparkling water
Instructions
- Place figs in a 1-quart jar; set aside. Bring sugar, vinegar, and water to a boil in a small saucepan over medium heat, stirring constantly until sugar dissolves.
- Pour sugar mixture over fruit, and gently stir. Muddle with a spoon. Cool to room temperature, seal jar, and store in refrigerator 8 hours or up to 2 days.
- Strain fig mixture twice through a fine-mesh sieve. Shrub makes ¾ cup.
- For each drink, pour 2 to 3 Tbsp shrub and vodka into a glass filled half full with ice; top with sparkling water. Store any remaining shrub in refrigerator up to 1 week.
