Peanut Butter and Jelly Waffles
Crispy Bacon
Ingredients
- 2¼ cups all-purpose flour
- 3 Tbsp sugar
- ½ Tbsp baking powder
- ¾ tsp baking soda
- ½ tsp salt
- ¼ cup butter, melted
- ⅓ cup creamy peanut butter
- 2 cups buttermilk
- 2 large eggs
- 1 (16-oz) pkg strawberries, sliced
- 1 cup creamy peanut butter, melted
- 1 cup strawberry preserves, melted
Instructions
- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Process melted butter and ⅓ cup peanut butter in a blender until combined. Add buttermilk and eggs, process until blended. Add to flour mixture, stirring just until combined.
- Spoon batter onto waffle iron according to manufacturer's directions; cook 2 to 3 minutes or until waffle is done (time will vary). Repeat.
- Divide waffles among 6 plates; top with strawberries. Drizzle melted peanut butter and melted preserves over waffles.

Side Dish Instructions
- Preheat oven to 400°F. Place bacon in a single layer on a foil-lined rimmed baking sheet. Bake 20 minutes or until crisp. Drain on paper towels.
