Peanut Butter and Jelly Waffles

Ingredients

  • 2¼ cups all-purpose flour
  • 3 Tbsp sugar
  • ½ Tbsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • ¼ cup butter, melted
  • ⅓ cup creamy peanut butter
  • 2 cups buttermilk
  • 2 large eggs
  • 1 (16-oz) pkg strawberries, sliced
  • 1 cup creamy peanut butter, melted
  • 1 cup strawberry preserves, melted

Instructions

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Process melted butter and ⅓ cup peanut butter in a blender until combined. Add buttermilk and eggs, process until blended. Add to flour mixture, stirring just until combined.
  3. Spoon batter onto waffle iron according to manufacturer's directions; cook 2 to 3 minutes or until waffle is done (time will vary). Repeat.
  4. Divide waffles among 6 plates; top with strawberries. Drizzle melted peanut butter and melted preserves over waffles.

Side Dish Instructions

  1. Preheat oven to 400°F. Place bacon in a single layer on a foil-lined rimmed baking sheet. Bake 20 minutes or until crisp. Drain on paper towels.
