Coconut-Ginger Rice

Ingredients
- ½ cup finely chopped onion
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- 2½ cups jasmine rice
- 2 (13.5-oz) cans unsweetened coconut milk
- 1½ cups water
- ¼ cup chopped fresh cilantro
- 2 Tbsp ginger paste
- 1 tsp lime zest
Instructions
- Cook onion and garlic in hot oil in a large saucepan over medium heat 3 minutes. Add rice, stirring to coat with oil.
- Add coconut milk and water; bring to a boil, cover, reduce heat, and simmer 20 minutes or until rice is tender. Remove from heat, and stir in cilantro, ginger, and lime zest. Season with salt and pepper, if desired.
