Canadian Bacon Egg Cups
Toasted English Muffins and StrawberriesIngredients
- 1 (6-oz) pkg sliced Canadian bacon
- 12 large eggs
- ½ cup shredded reduced-fat sharp cheddar cheese
- 1 tsp dried chives
- ½ tsp freshly ground pepper
Instructions
- Preheat the oven to 350°F. Coat a 12-cup muffin pan with cooking spray. Layer bacon into each muffin cup; carefully crack one egg into each cup; sprinkle with cheese, chives, and pepper.
- Bake 12 to 18 minutes or until whites are set and yolks are cooked to desired doneness. Serve 2 muffin cups each.

- ½ (16-oz) pkg strawberries
