Canadian Bacon Egg Cups

Ingredients

  • 1 (6-oz) pkg sliced Canadian bacon
  • 12 large eggs
  • ½ cup shredded reduced-fat sharp cheddar cheese
  • 1 tsp dried chives
  • ½ tsp freshly ground pepper

Instructions

  1. Preheat the oven to 350°F. Coat a 12-cup muffin pan with cooking spray. Layer bacon into each muffin cup; carefully crack one egg into each cup; sprinkle with cheese, chives, and pepper.
  2. Bake 12 to 18 minutes or until whites are set and yolks are cooked to desired doneness. Serve 2 muffin cups each.

  • 4 tsp butter
  • 2 whole wheat English muffins, split and toasted
  • ½ (16-oz) pkg strawberries

Side Dish Instructions

  1. Spread butter over muffins. Serve muffins and berries alongside egg cups.
