Smoky Barbecue Ribs

Parsley Potato Salad and Steamed Green Beans

Ingredients

  • 2 Tbsp smoked paprika (or use regular)
  • 2 tsp garlic powder
  • 1 tsp pepper
  • ½ tsp salt
  • 3 lb boneless country-style pork ribs, trimmed
  • 1 cup gluten-free barbecue sauce
  • 1 (12-oz) can gluten-free beer (or use gluten-free chicken broth)

Instructions

  1. Combine paprika, garlic powder, pepper, and salt; rub mixture over ribs. Place ribs in a greased 5- to 7-quart slow cooker.
  2. Stir together barbecue sauce and beer; pour over ribs.
  3. Cover and cook on LOW 8 to 9 hours or until ribs are tender.

Side Dish Ingredients

  • 2 lb Yukon Gold potatoes, cut into 1-inch pieces
  • ½ cup chopped fresh parsley
  • ½ cup sour cream
  • 3 Tbsp Dijon mustard
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large saucepan; cook 15 minutes or until potatoes are tender. Drain.
  2. Toss together potatoes, parsley, sour cream, mustard, and ¼ tsp each salt and pepper.
  3. Steam green beans according to package directions; sprinkle with ¼ tsp each salt and pepper.
