Turkey and Cauli Rice Taco Bowls

Ingredients

  • 1 lb 93% lean ground turkey
  • 1 (1.25-oz) envelope salt-free taco seasoning
  • ¾ cup water
  • 1 (12-oz) pkg frozen riced cauliflower 
  • 2 green onions, chopped
  • 3 cups chopped romaine lettuce
  • ½ cup shredded 75% reduced-fat sharp white Cheddar cheese
  • ½ cup refrigerated salsa
  • 1 large avocado, sliced

Instructions

  1. Cook turkey in a large nonstick skillet over medium heat 8 minutes or until browned. Add taco seasoning and water, stirring to combine. Cook 3 minutes or until slightly thickened.
  2. Cook cauliflower rice according to package directions. Stir onions into cauliflower rice.
  3. Arrange lettuce in 4 bowls or containers. Top with cauliflower mixture, turkey mixture, cheese, salsa, and avocado.
