English Muffin Breakfast Pizzas

Ingredients

  • 4 large eggs
  • 2 large egg whites
  • ¼ tsp salt
  • ¼ tsp pepper
  • 4 plant-based breakfast sausage patties
  • ½ cup chopped green bell pepper
  • 1 tomato, chopped
  • 2 whole wheat English muffins, halved lengthwise
  • ½ cup shredded reduced-fat Cheddar cheese

Instructions

  1. Preheat broiler. Whisk together eggs, egg whites, salt, and pepper in a large bowl.
  2. Cook plant-based sausage in a large nonstick skillet according to package directions; drain on paper towels, reserving drippings in skillet. Crumble sausage.
  3. Cook bell pepper in hot drippings over medium-high heat 2 to 3 minutes or until tender.
  4. Reduce heat; add eggs, and cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Stir in crumbled sausage and tomato.
  5. Arrange muffin halves, cut sides up on a foil-lined baking sheet. Broil 1 to 2 minutes or until toasted.
  6. Top each muffin half with egg mixture and cheese; broil 2 minutes or until cheese is melted.
