English Muffin Breakfast Pizzas

Ingredients
- 4 large eggs
- 2 large egg whites
- ¼ tsp salt
- ¼ tsp pepper
- 4 plant-based breakfast sausage patties
- ½ cup chopped green bell pepper
- 1 tomato, chopped
- 2 whole wheat English muffins, halved lengthwise
- ½ cup shredded reduced-fat Cheddar cheese
Instructions
- Preheat broiler. Whisk together eggs, egg whites, salt, and pepper in a large bowl.
- Cook plant-based sausage in a large nonstick skillet according to package directions; drain on paper towels, reserving drippings in skillet. Crumble sausage.
- Cook bell pepper in hot drippings over medium-high heat 2 to 3 minutes or until tender.
- Reduce heat; add eggs, and cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Stir in crumbled sausage and tomato.
- Arrange muffin halves, cut sides up on a foil-lined baking sheet. Broil 1 to 2 minutes or until toasted.
- Top each muffin half with egg mixture and cheese; broil 2 minutes or until cheese is melted.
