Teriyaki Chicken Tacos

Ingredients
- ½ lb boneless, skinless chicken thighs, cubed
- 1 tsp olive oil
- ⅓ cup shredded carrots
- ⅓ cup chopped red bell pepper
- 1 clove garlic, minced
- ½ cup teriyaki sauce
- 2 Tbsp chopped peanuts (or cashews)
- 4 low-carb soft taco-size tortillas, heated
- 1 green onion, thinly sliced
Instructions
- Cook chicken in hot oil in a skillet over medium-high heat 5 minutes or until lightly browned. Add carrots, bell pepper, and garlic; cook 6 minutes or until tender and chicken is done.
- Reduce heat to medium; stir in teriyaki sauce and nuts; cook 2 minutes or until thoroughly heated.
- Divide chicken mixture among tortillas. Sprinkle with onion.
