Ingredients

  • ½ lb boneless, skinless chicken thighs, cubed
  • 1 tsp olive oil
  • ⅓ cup shredded carrots
  • ⅓ cup chopped red bell pepper
  • 1 clove garlic, minced
  • ½ cup teriyaki sauce
  • 2 Tbsp chopped peanuts (or cashews)
  • 4 low-carb soft taco-size tortillas, heated
  • 1 green onion, thinly sliced

Instructions

  1. Cook chicken in hot oil in a skillet over medium-high heat 5 minutes or until lightly browned. Add carrots, bell pepper, and garlic; cook 6 minutes or until tender and chicken is done.
  2. Reduce heat to medium; stir in teriyaki sauce and nuts; cook 2 minutes or until thoroughly heated.
  3. Divide chicken mixture among tortillas. Sprinkle with onion.
