Ingredients

  • 3 (6-oz) salmon fillets
  • 1½ Tbsp butter, melted
  • ¼ tsp pepper
  • ⅛ tsp garlic salt
  • 2 tsp dried crushed rosemary

Instructions

  1. Preheat broiler with oven rack 6 inches from heat. Arrange fish on a foil-lined baking sheet; brush with butter, and sprinkle with pepper and garlic salt.
  2. Broil 5 to 7 minutes or until fish flakes with a fork. Sprinkle with rosemary.

  • ¾ cup whole wheat couscous
  • ¼ cup crumbled goat cheese (or use feta)
  • 2 small tomatoes, diced
  • 3 green onions, chopped
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Bring broth to a boil in a small saucepan. Stir in couscous; remove from heat, and let stand, covered, 5 to 6 minutes or until broth is absorbed.
  2. Stir in cheese, tomatoes, green onions, salt, and pepper.
