Italian Pork Chop Dinner

Ingredients
- 2 (1-inch-thick) boneless pork chops
- 3 Tbsp olive oil vinaigrette
- 1 clove garlic, minced
- ½ tsp pepper
- ¼ tsp salt
- ½ lb small red potatoes, quartered
- ½ lb green beans, cut into 1-inch pieces
- 1 cup grape tomatoes
Instructions
- Preheat oven to 400°F. Place pork on a lightly greased rimmed baking sheet.
- Whisk together vinaigrette, garlic, pepper, and salt in a large bowl. Add potatoes, green beans, and tomatoes; toss. Arrange vegetables around pork. Brush any remaining vinaigrette mixture over pork.
- Bake 25 minutes or until a meat thermometer inserted into thickest portion of pork reads 145°F and vegetables are tender.
