Ingredients

  • 2 (1-inch-thick) boneless pork chops
  • 3 Tbsp olive oil vinaigrette
  • 1 clove garlic, minced
  • ½ tsp pepper
  • ¼ tsp salt
  • ½ lb small red potatoes, quartered
  • ½ lb green beans, cut into 1-inch pieces
  • 1 cup grape tomatoes

Instructions

  1. Preheat oven to 400°F. Place pork on a lightly greased rimmed baking sheet.
  2. Whisk together vinaigrette, garlic, pepper, and salt in a large bowl. Add potatoes, green beans, and tomatoes; toss. Arrange vegetables around pork. Brush any remaining vinaigrette mixture over pork.
  3. Bake 25 minutes or until a meat thermometer inserted into thickest portion of pork reads 145°F and vegetables are tender.
