Miniature Brownie Ice Cream Stacks

Ingredients

  • 1 (18.3-oz) pkg fudge brownie mix
  • 1 (48-oz) container vanilla ice cream, slightly thawed
  • Whipped cream (optional)
  • Maraschino cherries (optional)

Instructions

  1. Line a 13- x -9-inch pan with parchment paper, allowing paper to extend over sides. Grease pan with cooking spray.
  2. Prepare and bake brownies according to package directions; cool. Using a biscuit cutter or the top of a small drinking glass, cut out 20 baked brownie rounds.
  3. Top half of brownies each with a small scoop of ice cream; top each with another brownie to make a sandwich. Garnish, if desired.
