Chocolate S'mores Pie
Ingredients
- 1½ cups graham cracker crumbs
- ¼ cup packed brown sugar
- 6 Tbsp butter, melted
- 2 (4-oz) dark chocolate bars, chopped
- 1½ cups heavy cream
- 2 cups granulated sugar, divided
- ½ tsp cream of tartar
- ½ cup water
- 4 egg whites, at room temperature
Instructions
- Preheat oven to 350°F. Stir cracker crumbs, brown sugar, and melted butter in a large bowl; press mixture into bottom and up sides of a 9-inch pie plate. Bake 10 to 12 minutes or until lightly golden brown. Chill until needed.
- Heat chocolate and cream in a saucepan over low heat 8 to 10 minutes or until chocolate is melted. Pour into crust, and chill 45 minutes.
- Meanwhile, heat 1½ cups sugar, cream of tartar, and water in a small saucepan over high heat. Bring to a boil; reduce heat to low, and simmer 3 to 5 minutes or until slightly reduced and thickened.
- Beat egg whites in a stand mixer fitted with whisk attachment at high speed until soft peaks form. Add ½ cup sugar, 1 Tbsp at a time, beating until blended. Scrape down sides of bowl.
- With mixer running at high speed, gradually pour in prepared sugar syrup. Beat 3 to 4 minutes longer or until egg whites are thick and glossy and stiff peaks have formed.
- Spoon meringue on top of pie. If desired, gently toast edges with a kitchen torch or under a broiler.
