Chocolate S'mores Pie

Ingredients

  • 1½ cups graham cracker crumbs
  • ¼ cup packed brown sugar
  • 6 Tbsp butter, melted
  • 2 (4-oz) dark chocolate bars, chopped
  • 1½ cups heavy cream
  • 2 cups granulated sugar, divided
  • ½ tsp cream of tartar
  • ½ cup water
  • 4 egg whites, at room temperature

Instructions

  1. Preheat oven to 350°F. Stir cracker crumbs, brown sugar, and melted butter in a large bowl; press mixture into bottom and up sides of a 9-inch pie plate. Bake 10 to 12 minutes or until lightly golden brown. Chill until needed.
  2. Heat chocolate and cream in a saucepan over low heat 8 to 10 minutes or until chocolate is melted. Pour into crust, and chill 45 minutes.
  3. Meanwhile, heat 1½ cups sugar, cream of tartar, and water in a small saucepan over high heat. Bring to a boil; reduce heat to low, and simmer 3 to 5 minutes or until slightly reduced and thickened.
  4. Beat egg whites in a stand mixer fitted with whisk attachment at high speed until soft peaks form. Add ½ cup sugar, 1 Tbsp at a time, beating until blended. Scrape down sides of bowl.
  5. With mixer running at high speed, gradually pour in prepared sugar syrup. Beat 3 to 4 minutes longer or until egg whites are thick and glossy and stiff peaks have formed.
  6. Spoon meringue on top of pie. If desired, gently toast edges with a kitchen torch or under a broiler.
