Red Beans and Greens Bowl

Ingredients

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 1 (10-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery)
  • 2 Tbsp olive oil, divided
  • 2 (15-oz) cans organic dark red beans, drained and rinsed
  • 1 cup vegetable broth
  • 1 tsp vegan Creole seasoning, divided
  • 2 cloves garlic, minced and divided
  • 1 (1-lb) pkg greens trio (or use mustard greens)
  • 2 Tbsp apple cider vinegar

Instructions

  1. Cook rice according to package directions. Season with salt and pepper, if desired.
  2. Cook vegetable seasoning blend in 1 Tbsp hot oil in a large skillet over medium-high heat 3 minutes or until tender. Add beans, broth, and ½ tsp Creole seasoning; bring to a boil. Reduce heat to medium, and simmer 10 minutes.
  3. Heat 1 Tbsp oil in another large skillet over medium heat; add garlic, and cook, stirring constantly, 1 minute or until fragrant. Add greens and ½ tsp Creole seasoning; cook, stirring often, 2 to 3 minutes or until just wilted. Stir in vinegar.
  4. Divide rice, beans, and greens among 6 shallow bowls.
