Greek Yogurt Pancakes
Ingredients
- 1⅓ cups whole wheat flour
- 1 Tbsp baking powder
- 1 Tbsp granulated sugar
- ¼ tsp salt
- ¾ cup 1% low-fat milk
- ⅔ cup fat-free plain Greek yogurt
- 2 large eggs, lightly beaten
- 1 (4.4-oz) pkg blueberries (or use your favorite berries)
- ¼ cup honey
Instructions
- Whisk together flour, baking powder, sugar, and salt in a bowl.
- Whisk together milk, yogurt, and eggs in a separate bowl until well blended. Whisk in milk mixture to flour mixture until just combined.
- Let stand 10 to 15 minutes.
- Pour about ¼ cup batter for each pancake onto a hot nonstick skillet coated with cooking spray over medium heat. Cook until tops are covered with bubbles. Turn and cook other sides.
- Serve with berries and honey.
