Greek Yogurt Pancakes

Ingredients

  • 1⅓ cups whole wheat flour
  • 1 Tbsp baking powder
  • 1 Tbsp granulated sugar
  • ¼ tsp salt
  • ¾ cup 1% low-fat milk
  • ⅔ cup fat-free plain Greek yogurt
  • 2 large eggs, lightly beaten
  • 1 (4.4-oz) pkg blueberries (or use your favorite berries)
  • ¼ cup honey

Instructions

  1. Whisk together flour, baking powder, sugar, and salt in a bowl.
  2. Whisk together milk, yogurt, and eggs in a separate bowl until well blended. Whisk in milk mixture to flour mixture until just combined.
  3. Let stand 10 to 15 minutes.
  4. Pour about ¼ cup batter for each pancake onto a hot nonstick skillet coated with cooking spray over medium heat. Cook until tops are covered with bubbles. Turn and cook other sides.
  5. Serve with berries and honey.
